Brewery
Timmermans has preserved the tradition of true lambic for over 300 years. Brewed with 30% wheat in Itterbeek, at the oldest active lambic brewery, this unique beer owes its origin to a miracle: micro-organisms in the air of the Senne valley cause spontaneous fermentation in the wort. True lambic can only be brewed within a 15 km radius of Brussels, in the region known as Pajottenland. Since 1993, Martin’s Finest Beer Selection has proudly upheld this authentic part of Belgium’s beer heritage.
FRUITY
Exceptional Timmermans Lambic beer is infused with raspberries, strawberries, sloes, peaches, or cherries. The result is a young, refreshing beer where the typical acidity of Lambic is mellowed by sweet, fruity flavors. It’s an absolutely irresistible and refreshing taste perfect for the summer!
TRADITIONS
The Traditions range blends fruit and spices with traditional Lambic beer, which is produced through spontaneous fermentation and forms the base of the entire range. Whether it’s the addition of candy sugar (Faro) or spices (Lambicus Blanche), the Traditions beers are sure to delight your taste buds.
OUDE
The Lambic beer that forms the basis for Oude Gueuze and Oude Kriek can only be brewed within a 15 km radius around Brussels, in the region known as Pajottenland. Unique micro-organisms in the air of the Senne Valley initiate the spontaneous fermentation that gives Lambic beer its distinctive taste.
To be labeled “Oude,” the old Lambic beer, matured in wooden casks for three years, is blended with young Lambic beer. This blend triggers a “new” fermentation in the bottle, thanks to the residual sugars. The brewer carefully selects different Lambic beers to achieve the perfect taste.
LAMBIC & STOUT
Discover an extraordinary blend of three unique beers crafted by Guinness (Ireland) and Timmermans (Belgium). This exceptional fusion combines Guinness West Indies Porter (1801), Guinness Special Export (first brewed in 1944 exclusively for John Martin), and Timmermans Oude Kriek from the world’s oldest lambic brewery.
Located around twenty kilometers from Brussels, Waterloo is world-famous as the site of Napoleon’s most renowned battle: the Battle of Waterloo.
This legendary clash occurred on June 18, 1815, culminating in a decisive victory for the allies (British, Germans, and Dutch) led by the Duke of Wellington, and the Prussians, both opposing the French army under Emperor Napoleon I.
Interestingly, the battle did not take place in Waterloo itself but slightly further south, in the areas of Lasne, Braine, and Genappe. In France, the battle is often referred to as ‘The Battle of Mont-Saint-Jean.’
This battle was Napoleon’s last personal engagement. He had reclaimed control of France during the Hundred Days War. Despite his intention to continue fighting with reconstituted forces, he was forced to abdicate four days after his return to Paris due to a lack of political support.
The Battle of Waterloo is a significant historical event that ended Napoleon’s conquest of Europe and established future continental boundaries.
Today, the Waterloo battlefield remains one of Europe’s largest and best-preserved historical sites. Annually, over 300,000 visitors from around the world come to climb the famous Lion’s Mound and view the vast landscape where the troops fought fiercely.
Each June, thousands of participants gather in Waterloo to reenact the battle. This spectacular event captivates the thousands of spectators who attend.
In 2015, a major project, in collaboration with local authorities, aimed to celebrate the bicentennial of the battle. The project includes a new underground museum, the renovation of the Mont-Saint-Jean farm-brewery, a ‘Napoleon Road,’ and an unprecedented reenactment with 6,500 actors, expected to draw 200,000 visitors that summer and 500,000 visitors annually thereafter.
OUR BREWERS
The crafting of Waterloo Beer is entrusted to our dedicated brewing team. Under the guidance of head brewer Willem Van Herreweghen, our two young brewers ensure the excellence of our products. Thomas Vandelanotte brings valuable experience from his years at the Timmermans Brewery, known for its authenticity, vitality, and quality. Alongside him is Edward Martin, the great-grandson of John Martin, who has been immersed in the world of beer from birth and is committed to maintaining the highest quality standards.
THE BEER
WATERLOO TRIPLE BLONDE
DESCRIPTION A genuine Belgian top-fermented beer with a rich heritage. After several weeks of fermentation, secondary fermentation in the bottle adds a subtle finishing touch to the aroma.
COLOUR Bright golden yellow with very fine bubbles and a thick, creamy head.
AROMAS The first impression is fresh and yeasty. Lively and fruity aromas are accompanied by delicate and refined hop notes, complemented by hints of green apple and lime blossom.
FLAVOUR The initial pure flavors persist on the palate and are well balanced. With a smooth texture, Waterloo Triple Blonde reveals the quality of the malt and offers a refreshing hoppy finish with pleasant bitterness.
AFTERTASTE AND GENERAL IMPRESSION A well-structured, characterful, and full-bodied mouthfeel with a pleasant aftertaste. It strikes a perfect balance between hops and malt.

WATERLOO DOUBLE BRUNE
DESCRIPTION This top-fermented dark beer is brewed with roasted malts. The secondary fermentation in the bottle imparts a powerful and pleasant character.
COLOUR Reddish-brown with a creamy, persistent head.
AROMAS The nose is complex, powerful, and full-bodied with earthy notes of old wood. Initial aromas are strong (alcohol) and spicy (wood), yet well balanced, leading to a pleasantly caramelized finish.
FLAVOUR A round mouthfeel and roasted malty flavor enhance the aromas of coffee and toffee (molasses and caramelized butter).
AFTERTASTE AND GENERAL IMPRESSION Its dark color and warm strength make Waterloo Double Brune a delicious beer!

WATERLOO SAISON BIO
DESCRIPTION Waterloo Saison Bio is a traditional, seasonal farm beer brewed at the Mont-Saint-Jean farm using organic barley and wheat grown in the farm’s fields.
COLOUR This cloudy, unfiltered beer has a bright yellow color with a fine and delicate head.
AROMAS The malted cereals impart a slightly crisp, bread-like aroma with floral notes.
FLAVOUR The “seasonal” yeast used during brewing gives the beer its typical dry character, complemented by the mild flavor of clove. Organic, 100% Belgian hops contribute to the intense, persistent bitterness and the delicately spiced temperament.
AFTERTASTE AND GENERAL IMPRESSION With its long aftertaste and balanced flavors, Waterloo Saison Bio is a beer full of character and very pleasant to taste.

WATERLOO RED CHERRY
DESCRIPTION Waterloo Red Cherry is a perfect blend of brown beer and natural cherry juice, resulting in a balanced red fruit beer with a subtle hint of lemon. The lambic used is brewed by Timmermans, the world’s oldest lambic brewery (since 1702).
COLOUR Bright cherry color with a delicate head. EBC: 49.
TASTE Key flavors: Cherry, Almond. Enjoy the natural sour cherries perfectly balanced with the explosive sweetness of cherry juice. Notes of almond and red apples make this a fruity beer waiting to be discovered.

WATERLOO CUVÉE IMPÉRIALE
DESCRIPTION Waterloo Cuvée Impériale is crafted with special malts to highlight a rich, silky chocolate character. After brewing, it is aged in empty casks previously used for Waterloo whiskies for almost a year, allowing the flavors of wood, vanilla, and whisky to infuse the beer.
AROMAS Dominant chocolate notes are complemented by vanilla, oak, and a touch of toasted wood, enriching the taste experience. The long finish reveals hints of liquorice and subtle caramel, accompanied by a warm, alcoholic undertone.

The Van Houtryve brewing dynasty, encompassing no fewer than three breweries, has significantly influenced the brewing tradition of Bruges. Records from 1765 mention a farm-brewery in Loppem owned by Pierre-Jacques Van Houtryve. However, it was his son who, in 1825, obtained permission from the representative of the States of Flanders to establish a brewery within the city walls of Bruges, leading to the creation of Den Os Brewery.
On the eve of WWI, three members of the Van Houtryve family were at the helm of their respective breweries: Den Os, La Marine, and Ten Ezele. This period saw a peak in Bruges’ brewing activity, with 34 active breweries, only two of which remain today. It was during this heyday, just before the First World War, that the flagship beer of Den Os Brewery, Bourgogne des Flandres, came into being.
Bourgogne des Flandres is an authentic West Flemish red-brown beer that has endured long-term competition from the hugely popular lager beers since WWI, as well as the destruction caused by WWII. Despite its resilience, Den Os Brewery ultimately closed its doors in 1957.
OUR BEER
A Surprising Beer with a Unique Flavor
Bourgogne des Flandres holds a special place in the Belgian beer landscape. It exemplifies the Flemish tradition of blending old and young beers to achieve a perfect balance. Den Bruinen Os is brewed on-site in the loft and blended with lambic from Timmermans Brewery, which has aged for over twelve months in wooden barrels. The result is a surprising red-brown beer with a low alcohol content and a complex, unique flavor.

Bruinen Os is a high fermentation craft beer, brewed in limited quantities at the Bourgogne des Flandres Brewery in Bruges. It delivers the powerful taste of an authentic Flemish Brown Ale, balancing strength and sweetness. This beer boasts a beautiful dark ruby-like, slightly cloudy color.
